Vegetarian Cooking Demo: Thai Red Curry with Basmati Rice!

Ah, autumn has finally made an appearance bringing with it chilly mornings and bitter winds! As enchanting as this season is, I think we can all agree that we can use a little warmth this week. And what better way to spend Friday evening than cozying up next to a bowl of warm Thai Red Curry and basmati rice?

Join us this Friday October 9th from 7:00 PM – 8:00 PM EST for a follow cooking demo led by a special guest all the way from good ol’ Texas!

Here are the ingredients you’ll be needing:

  1. 2 cans of coconut milk
  2. Basil
  3. Red Peppers
  4. Red Miso paste
  5. Lemon grass (fresh or powder)
  6. Cilantro
  7. Salt
  8. Sugar
  9. Hing (asafoetida)
  10. Coriander powder
  11. Ginger
  12. Smoked Paprika (or any kind of chilli powder)
  13. Tomato sauce or paste
  14. Rice vinegar or lemon juice
  15. Extra firm tofu
  16. Any vegetables of your choice (cauliflower, carrots, and sweet potatoes are good choices)

You’ll be needing a blender and an Instant Pot. But if you don’t have an Instant Pot, that’s fine! The recipe can easily be adopted for the stove too!
